Otak-otak (using the Philips Airfryer)

Makes: 6 servings

Ingredients/Ramuan
·         6 pcs fishfillet/isi ikan putih
·         1 medium-sized onion/bawang besar
·         3 cloves of garlic/bawang putih
·         1 inch turmeric root/kunyit hidup
·         1 inch ginger/halia
·         2 stalks lemongrass
·         6 red chillies, deseeded/cili merah, dibuang biji
·         3 pcs of kaffir lime leaves/daun limau purut
·         1 tsp roasted shrimp paste/belacan
·         1 tsp ground coriander/serbuk ketumbar
·         1 tsp ground cumin/serbuk jintan putih
·         3 eggs/telur
·         1 tbsp corn flour/tepung jagung
·         ½ cup coconut cream/santan pekat
·         ½ tbsp. sugar/gula
·         1 tsp salt/garam
·         8 pcs of wild betel leaves/daun kadok
·         banana leaves, wilted and cut into 8” x 5”/daun pisang, dilayukan dan dipotong ikut saiz 8” x 5” inci



Method/Cara
1.     Place the onion, garlic, turmeric root, ginger, lemongrass, chillies, kaffir lime leaves and shrimp paste into the Philips Viva Collection blender with Duravita Tritan jar (Duravita blender) andblend till fine.
2.     Put in half the fish slices, coconut milk, eggs, ground cumin and ground coriander. Season with salt and sugar. Blend again.
3.     Place one piece of the betel leaf on top of one piece of banana leaf. Scoop 2 tbsp of the micxture onto it and top with a slice of fish fillet.
4.     Place banana leaf over a small over proof bowl. Place the fish over and add 2 scoops of the mixture over the fish or until ¾ full. Cook in the Philips Airfryer at 180°C for 20 minutes. Once done, serve with rice.

1.     Kisarkan bawang besarm bawang putih, kunyit hidup, serai, cili, belacan dan daun limau purut ke dalam pengisar Duravita (blender) sehingga halus.
2.     Masukkan setengah dari hirisan isi ikan, santan, telur, serbuk jintan dan ketumbar ke dalam pengisar.
3.     Perasakan dengan garam dan gula. Kisar sekali lagi sehingga sebati.
4.     Alaskan bekas tahan bakar dengan daun pisang. Lapikkan dengan daun kadok keatasnya.
5.     Susunkan hirisan isi ikan keatasnya. Tuangkan kisaran otak-otak keatas susunan ikan.
6.     Bakarkan  di dalam Philips Airfryer selama 20 minit di suhu 180°C.
7.     Apabila sudah masak, hidangkan dengan nasi.
